Caitlyn is Head Sommelier and Manager at Fred’s at Charlie Parker’s in Sydney. She has helped shape the team since they opened in 2016, seeing Fred’s quickly grow into one of Sydney’s hottest dining spots. The team is underpinned by a joint belief in sourcing the best possible sustainable produce and taking care of the people who farm it.
Originally from Western Australia, in the six years since she moved to Sydney Caitlyn has worked her way up the ranks from waiter to Sommelier in some of city’s most respected bars and restaurants including Felix Bar & Bistro, Momofuku Seiōbo and The Wine Library.
She is driven to work in hospitality because of the connections she makes with people. Whether that’s on the floor with guests, supporting local producers by buying their produce, or learning about those out there in the industry worldwide who are really pushing the boundaries. She believes that deliciousness is just as important as the welfare of the produce, the producer and the environment.
Caitlyn has an unending passion to connect and facilitate knowledge-sharing within the hospitality industry. She created the ‘Women in Wine Society’ to connect females working in the wine industry in Sydney. This collective has grown from wine tastings and regular meeting into genuine friendships among the group.
Working closely with Melbourne Food and Wine to determine her dream places to work overseas, Caitlyn has already expressed an interest in visiting the cideries in Normandy, France.
