Charlie Carrington: 30 Under 30

Charlie Carrington is the 28-year-old chef-owner of Atlas Dining, a hatted South Yarra restaurant that changes tack every three months, robing itself in the flavours of a different cuisine with every makeover, and Atlas Weekly and Atlas Daily – a revolutionary recipe box delivery service born during the lockdowns.

Hi, my name is Charlie Carrington

Right now I’m working at Atlas Dining as the chef and owner 

Before I started here, I worked at Firedoor, Marque and Vue de Monde. 

All up, I’ve been cooking for 14 Years – 10 of them in Victoria. 

And I’m passionate aboutglobal cuisines and world travel. 

Which means I like cooking dishes from around the world; we change our menus constantly and develop new ideas. 

At 30 Under 30 I’ll be cooking a kingfish, avocado and peach hot sauce snack, inspired by my time in the USA.

The person I’m most looking forward to working with for 30 Under 30 isZackary Furst. He’s always doing great things and I have a lot of respect for the dishes he creates. 

My favourite thing to eat in Victoria right now is the souvlaki at that epic joint Orexi in Oakleigh – next level. 

Finally, the big change I'd like to see in our food and drink scene in the next 30 years is hospitality being viewed as more of a career, rather than something you just do. This would help us create more of a world-class hospitality scene in Australia.
