Giorgia McAllister Forte: 30 Under 30

Giorgia McAllister Forte is a British-born pastry chef who made Melbourne home eight years ago.

From age 10, she knew she wanted to be a pastry chef and began the journey straight out of school, developing her skills in restaurants, cake shops and finally a bakery where her love for Viennoiserie grew, culminating in the opening of Monforte in 2020.

Right now I’m working at Monforte. In the midst of what now seems like early COVID I opened Monforte, a (very) long dreamt of hole-in-the-wall pasticceria in Carlton North producing seasonal European-leaning pastries and jams from what could be the smallest shop going.

Before I started here, I worked at All Are Welcome in Northcote, assisting Boris Portnoy with opening and establishing the bakery, now a well-loved institution. Prior to that, I worked at Claire Ptak's now-famous bakery Violet in London.

All up, I’ve been baking for a little over 10 years, with over half of those in Melbourne.

And I’m passionate about continuously developing my skills and trying new things within the framework of seasonality and sustainability, and making the simplest ingredients shine.

At 30 Under 30 I’ll be baking buffalo ricotta and bergamot sfogliatelle. To amplify the sweet, milky flavour from the ricotta and minimise waste, we'll also be using the excess whey from the production process throughout the sfogliatelle.

The person I’m most looking forward to working with for 30 Under 30 is Rosheen Kaul – her food is beautiful and so flavourful. I really admire her.

My favourite thing to eat in Victoria right now is Birdsnake and Chotto Motto's new collaboration, Crispy Chilli Chocolate. Warming spices and crisp rice puffs, all wrapped in 60 per cent Ecuadorian deliciousness. Can't get enough.

Finally, the key change I'd like to see in our food and drink scene over the next 30 years is… I'm thoroughly enjoying the explosion of smaller, independent, thoughtful producers in all areas of food who really care about what they're doing and how they impact the world around them, both locally and beyond. I very much hope to keep seeing more of this, it benefits us all.
