Hi, my name is Niko Pasieka.
Right now I’m working at Maha Bar as head chef.
Before I started here, I worked at Maha Restaurant for two years.
All up, I’ve been cooking for 13 years, three of them in Victoria.
And I’m passionate about creating experiences and being able to cook people good food.
Which means I enjoy cooking things like slow-braised meats, roast poultry, home-made pasta and more.
At 30 Under 30 I’ll be cooking roast spiced carrots with pine-nut butter.
The person I’m most looking forward to working with for 30 Under 30 is everyone, because I always enjoy working with a new team and meeting new people.
My favourite thing to eat in Victoria right now is deli-style meats, fresh bread and a selection of cheeses. It tastes good all year round and never disappoints.
The big change I'd like to see in our food and drink scene in the next 30 years is a more sustainable food supply, and more use of local produce, because it’s very much needed.
