Hi, my name is Roc Lee.
I’m currently working at Hawker Hall as a senior sous chef.
Before I started working here, I worked at several different places, including The Grain Store, Calia, Yu Kitchen, Crown Melbourne and most recently at Crown Sydney before I moved back to Melbourne to join the Lucas Restaurants.
All up, I've been cooking for about six years, five of them in Victoria.
I'm passionate about producing great food for all our guests, seeing smiles and compliments whenever they enjoy our dishes.
I like cooking things like Asian fusion, as it not only brings back precious memories of my home country but is also a training ground for me to further improve myself in my journey.
At 30 Under 30, I'll be cooking a classic Chinese dish known as XO pipis.
The person I'm most looking forward to working with for 30 Under 30 is basically every single one of the chefs participating, simply because it'll be such an honour to work among such great people, and there will be plenty for me to learn from them.
Finally, the big change I'd like to see in our food and drink scene in the next 30 years is to have more young chefs not be afraid to step up and be eager to learn and lead, as I've seen plenty of chefs – regardless of their age – with huge passion, but who are often afraid to step up and show everyone what they can do. Looking forward to meeting you all at 30 Under 30!
